Restauranteurs, chefs and culinary authorities have long debated the ultimate appeal of a meal. Especially with the rise of social media, photographers argue that you “eat with your eyes first.” Neuroscientists (or anyone who sat through fourth-grade science) insist that smell dictates flavors, and hence the allure of food is aroma-based. Some market research even suggests that the color of your flatware influences taste.

Beyond the basics of biology, food and hospitality experts add another, and perhaps more holistic, angle to the prism. Emotions.

Gallup research reveals that the primary influencer of repeat restaurant business is the service — how the employees and staff value the customer. Tom Colicchio, one of Bravo’s Top Chef judge, hones this concept further. It’s how customers are greeted immediately as they enter and exit the doors of your restaurant. Hospitality. Service. Ambience. Trust. This concept appears in restaurant vernacular under many banners.

The “X” Factor

So what gains repeat business? What makes a memorable meal? The truth may be closer to “D: All of the above,” a delicate blend of the physical sensations and emotional ambience rolled into some enigmatic “sixth sense.” Every element, from the ingredients and kitchen sounds to the energy and tempo of beverage service, colors the experience, and hence, every staff member plays a key role.

We needn’t remind hospitality professionals to invest in the holistic process of staff development. But as an extension of the team, PR experts also play a vital role in completing the picture when interacting with guests, influencers and staff beyond the restaurant’s four walls.

The Bridge Out

The experience doesn’t halt once the guest exits the front doors. Memories last, opinions gel, questions surface and social media often provides a ready mouthpiece for an ongoing relationship with diners. Here’s where your PR team needs to be integrated into your culture. The Conduit In

Since we have our fingers on the pulse of the restaurant industry, PR partners like Clairemont can provide valuable feedback and strategic council that stays in step with the ebb and flow of culture. Certainly, we can assess overt forms of feedback, such as Yelp and blogger posts, restaurant reviews and Facebook messages. We all love a fresh bouquet of blooms, cheery decor to brighten a room or to celebrate a special occasion. But what about flowers … as a dinner appetizer?

In early June, we joined Clairemont client Il Palio at the Atlanta Food and Wine Festival where Chef Teddy Diggs dished up surprising regional Italian delicacies. His deep-fried squash blossoms piped with ricotta stole the hearts of the guests — as evidenced by the long lines to his booth! After a long (but fun) day in the sun at the Tasting Tent, we snapped this shot of Chef Teddy Diggs and Anthony Carey, general manager, The Siena Hotel, enjoying the last lone blossom.

I’ve been astounded by the recent surge of articles and posts highlighting one of my favorite indulgences: cheese. Raclette NYC’s “melted wheel of cheese” video has circulated through my Instagram feed more than once, matched in popularity perhaps only by the video of pasta made in a cheese wheel. The New York Times, Food and Wine, Cooking Light and Tasting Table have all featured this superstar ingredient within the last 24 hours.

And what’s up with the rainbow grilled cheese? I’m not sure if I’m about to eat a sandwich or a patty of melted skittles.

And yet fans worldwide profess a lifelong loyalty to this ingredient, evident from the grocery cart to the Instagram account. Cheese has mastered some secret to success that if emulated could transform us into famous marketers, writers, chefs, accountants, friends and general human beings. Here are two traits that struck me.

  • Versatility. Compare the casual warmth of an after-school grilled cheese to the complex sophistication of a French fromage board. Cheese has served as a melted dip, a salad topping and a main course; it has been shaped into balls, fried into crispy straws, whipped into waffles and concocted into cosmetic face masks.
  • Individuality. Despite more than 1,800 listed types on Cheese.com, no two are alike. Each boasts a distinct flavor profile, from the nutty grassiness of Roquefort to Taleggio, which SeriousEats describes as “rich, buttery, meaty, feet.” Feet. Quite specific and infinitely memorable!

Ah, the lessons we can learn from food. Versatility and specificity, applied to any field, can strengthen market messaging, build brand affinity and even develop new customer demographics. Bottom line?

It’s ok to be a little cheesy now and then.

What’s in a (Restaurant) Name?

Remember Romeo and Juliet, Shakespeare’s love-trodden saga? In her pivotal monologue from the balcony, Juliet proffers the query, “What’s in a name?” as she weighs the merits of pursuing Romeo.

Shakespeare and marketers share something in common. While branding entails much more than just a name, PR professionals understand the weight that words carry. For example, who would have guessed that Texas Pete hot sauce is actually made in Winston-Salem, North Carolina?

When naming a restaurant, new menu item or even a culinary event, the name matters. We put our heads together with colleague, marketing consultant and brand strategist, Ilina Ewen, to cull a few name development do’s and dont’s.

Do:

Identify your brand first.

What is the promise you are making to your customer? Develop your foundational principles (your reason for existing!) and consider the experience you envision customers enjoying. Is it an energized drive-through diner centered on southern recipes or a mellow, relaxing wine bar that celebrates comfort and conversation? The ambience will inform the next step — identifying your future diners and your brand voice.

Scope out the competition.

Chick-Fil-A CowBefore committing to a restaurant name or design, give a gander at other venues in the area. If you’re developing a fast-casual chicken joint, it might be best to steer clear of curly red font reinforced with, say, cow mascots. Take inventory of everything from colors and geometrics to verbiage and ambience to latch on to your differentiating factor.

Reinforce with visuals.

Words are powerful, yes, but they don’t function in a vacuum. This is where a strNoodles & Coong graphic designer can help put meat on the bones of your concept through visuals that project your restaurant’s experience. Some brands will need more direct imagery than others. For example, it’s quite clear the cuisinPrinte that’s served at Noodles & Company. But Harvest 18? This culinary gem requires distinct visuals — such as the tractor in the logo — to help clarify its farm-fresh approach to southern food.

Don’t:

Name it after that random guy.

Things like Dave’s Diner or Evan’s Eatery. Unless Dave or Evan are local celebrities or culturally relevant icons, their names convey nothing of importance to the potential diner — especially if they no longer work at the restaurant. Don’t get us wrong. We love Five Guys’ hand-crafted burgers and fries — probably too much! But until you taste that heaven on a bun, prospective diners receive no clues about the restaurant’s delectable menu.

Skip your homework on cultural implications.

Research not just the words and phrases but also the cultural sensitivities surrounding your proposed name. If exploring ethnic cuisine, watch for double entendres or cultural appropriation that might spark anything from aversion to irateness in your audience.

Blabber.

Keep in mind that most restaurants or events need to establish an online presence, and lengthy or verbose names don’t translate well into social media handles. Avoid easily misconstrued characters, such as the hyphen or the number one, and use capitalization to emphasize otherwise confusing phrases.

I recently discovered DJ Khaled’s Snapchat. If you’ve never heard of DJ Khaled, he is on almost every single rap song. Ever. He even yells his name at the beginning of most of his anthems, like “All I Do Is Win”.

On his Snapchat story, the multi-millionare takes us step-by-step through his entire day. He is always on “the pathway of more success” and uses funny, motivational slogans that serve to empower his followers. He recently started using “keys” that – interestingly enough – inspire my own career as a PR practitioner.

Key One: Chef Dee

Every morning, Khaled walks around his mansion and blurts out, “ChefChef Dee Dee, what you got cookin’ for me today?” His personal chef answers by listing all the healthy meal options that she has prepared for breakfast. DJ Khaled explains that “they don’t want us to eat healthy, so we must eat healthy.” He never tells us who “they” is, but I assume he is referring to negative-minded people.

Although I am not making major million-dollar deals like Khaled his simple key to success still rings true for me. He reminds us that eating a healthy, balanced meal helps to start the workday off on the right note. Starting with a full stomach increases my productivity and helps my creative juices flow for our clients.

Key Two: DJ Khaled Gets Lost At Sea

Who else dreams of having the luxury to jet ski all day? I do. While I was swooning over the lavish lifestyle that the music guru lives, something hilarious happened. Khaled got lost in the ocean on his jet ski.

As funny as it sounds, this is also a “major key” to my career in PR and at Clairemont. We have all faced a time where we were so overwhelmed we felt lost. Khaled teaches that “the key is to never give up, to win more.”

How can we use this lesson in agency life? Don’t be afraid to ask your team members or colleagues for help or support. I have found that it’s always beneficial to ask for help when needed so that you don’t get lost at sea with your projects.

Key Three: Business is Always Boomin’

Ben, a 16 year-old that we know absolutely nothing more about than his name, appears regularly on the mogul’s Snapchat story debuting the hottest new sneaker trends. When Ben is asked, “How’s business?” The simple yet dramatic reply is always, “BOOMIN’.” Ben

How can we keep business boomin’? First, I make sure that I know and clearly understand our clients’ goals and needs. What are they trying to accomplish as a business? What does success look like to them? I keep business boomin’ by staying connected with client contacts and working to develop a reliable, open relationship with them, working in tandem to meet these goals.

Key Four: Elliptical talk

If you have ever seen a photo of Khaled, you know he isn’t a particularly skinny man. Recently, he has taken health and wellness to another level on his elliptical.

Elliptical talk is a “major key to success” for the star. We see him in his home gym on an actual machine exercising and reciting lyrics to some of the week’s hottest songs. How does this translate to our industry?

Khaled reminds us that we have to cultivate our best selves in order to help others. If we aren’t in shape (mentally and physically), we can’t secure top media placements and create top-notch client campaigns. The Clairemont team expands our knowledge by watching webinars and attending luncheons. On Well Wednesday, our team trades its business dresses for yoga pants in the office, this allows us to go for a run or attend a boxing class when our schedules allow. Get on your “elliptical to success” and create a positive-minded person so that your clients can’t imagine a day without you.
