We tend to get a little fired up about social networking here at Clairemont. After all, social networking — or at least the desire to integrate it into overall strategic communications campaigns — was one of the reasons Clairemont was started. If you want to know how I really feel, just use the term social networking expert in a conversation with me. Why? Because I don’t believe in social networking experts. I believe in communications experts.

I recently had the opportunity to talk about what we do at Clairemont on WCHL’s Today’s Business with Jeremy Salemson. If you listen to the interview, you will hear that a large portion of our time was spent discussing social networking. Because of that, Jeremy invited me to be a guest on another show he hosts on WRAL.com, Business Today, to discuss social networking again. The format allows for short Q’s and A’s, so if this sparks more detailed questions for you, please contact me for further discussion.

More Earth Day Goodness

Today is the 40th anniversary of Earth Day. For Clairemont, Earth Day resulted in all kinds of goodness!

Since the beginning of the year and the first week Clairemont opened, we’ve been planning for Earth Day activities at Briar Chapel by Newland Communities which included a celebrity chef charity event that benefited The Abundance Foundation and the National Breast Cancer Foundation. In addition to getting to work with smart, creative and nice clients at Briar Chapel, we had the pleasure of getting to know the chefs, managers and owners at Busy Bee Cafe, Irregardless Cafe and Carolina Inn. As a result, we improved our connections for insider information on some of the best food in the Triangle and made some great new friends.

Earth Day Goodness – Part 3

In working with Clairemont client, Briar Chapel, I recently had the great honor of interviewing Chef Arthur Gordon of Irregardless Cafe. As you will learn from the Q&A below, Arthur pioneered cooking with local ingredients and supporting area farmers in Raleigh. I love his food, and I think he would be as equally as successful at the comedy club next door to the cafe!

1. What’s it like to be the chef at Irregardless Café? In French, the word chef means chief, so it’s a real pleasure to be the chief, the head, the operating honcho of a group of people who are like-minded. I like to think that Irregardless Café is an oasis in Raleigh – no TV, live music, fresh food – and to be able to provide this to the community at large is a real honor. This concept is the vision I had 35 years ago, when I began Irregardless, and it’s a real blessing to see it realized.
2. When did you know you wanted to be a chef? From an early age. When my mom and dad got married, my mom said to him, “I’m going to be good in one room in this house, you pick it.” So, as a dysfunctional family, I learned how to cook. Dad was happy, and I learned to cook. French toast was my forte. We grew up in Durham, and we owned a ladies dress shop, where dad bought the clothes and mom sold them. You see the room dad picked was actually the dress shop – see, it wasn’t what you were thinking.
3. Where did you start your career as a full-time chef? In 1972, I graduated from UNC, and I wrote to the Culinary Institute of America, the CIA, about coming to be trained as a professional chef. They wanted everyone to have at least one year of experience first, so I thought I’d open a restaurant for a year or two. Well, I haven’t gotten to cooking school yet. I started here in 1974. I built the building by converting it from a laundry into a restaurant, and I just kept expanding over the years. In 1994, we had a fire, so when I rebuilt, I made the kitchen as large as the dining room. I figured if I was going to spend my life in that kitchen, I would make it big, and it’s worked out well. It’s allowed us to be able to have a catering business, and not bog down the kitchen that’s also serving the dining room. Continue reading “Earth Day Goodness – Part 3”

Green Day

In keeping with the Earth Day theme of recent posts, Friday was certainly a green day! I got to visit with Clairemont client and maker of organic, Cotton of the Carolinas (local cotton if you are in NC!) and recycled tees (because every soda bottle deserves a second chance!), TS Designs, and meet Jeanne from The Green Samaritan which is an amazing resource of eco information. Then I stopped by Weaver Street Market, and NOW I know first hand what all the fuss is about! And wouldn’t you know it, they were selling shirts by TS Designs!

Celebrity Chef Perspective: Jeremy Clayman, Busy Bee Cafe

As promised, we are continuing to share with you features from our local partners, restaurants, educators and friends as we take a look at sustainability from various angles – all leading up to Earth Day. Today we are pleased to hear from Chef Jeremy Clayman of the Busy Bee Cafe:

Q: When did you know you wanted to be a chef?

A: The profession found me. I started washing dishes at age 15, staying at work until 2 a.m. and worked my way up by doing prep and line work. I wanted to be a highschool English teacher and they wanted me to do all types of science and math – I was not feeling that – quit school twice. Wound up back in the kitchen and realized I could use my hands and be creative. I started taking it serious around 22 or 23… and decided that’s what I wanted to do.
